Potato Candy

Ingredients List:


1/2 cup cold mashed potatoes (no special

flavors like garlic or chive!)

1/8 teaspoon salt

1/2 teaspoon vanilla

Powdered sugar (4-7 cups)

Peanut Butter (smooth / creamy)

3 things more

 

Cookware or Tools Needed:


Rolling Pin       

Waxed paper


 

Instructions:

  1. Mix mashed potatoes, salt, and vanilla.
  2. Add powdered sugar, until it holds shape on waxed paper. 
    1. When adding the powdered sugar, it might temporarily take on the consistency of syrup.  Just keep adding until it holds it’s shape.
  3. Sprinkle with powdered sugar.
  4. Roll into rectangle   (approx. 9” X 16”, and 1/8 inch thick)
  5. Spread with peanut butter (probably as thick or thinner as above ingredients)
  6. Roll up length wise.  (should end up with long skinny roll, not fat and short)
  7. Rap in wax paper.
  8. Chill in refrigerator for 30-60 minutes.
  9. Slice into slices about 1/4 inch thick.
  10. Done.

 

Serving Instructions:

Keep cold and eat.

 

Notes:

More powdered sugar might be required.  Might be a good idea to have much more that what is required on hand for this recipe.
